I'm just your regular undercover cat lady with a deep DEEP love for all things design related, farmer's markets, anything that involves running, kicking a ball, or pedaling real fast, organizing, European adventures with my best friend, cooking, eating (especially chocolate peanut butter ice cream) and being a vegetarian! Saving the world one meal at a time :)

What’s for dinner?

I’m one of those people who at any given moment usually craves something. Last night, however, nothing. It was so weird! And because of it I had peanut butter and raisins on a rice cake, an apple, and orange juice for dinner, with oatmeal for dessert. Lame. When perusing the wide wide web this morning I came across Candle 79, a Vegetarian/Vegan restaurant in NYC whose menu had me SO excited I had to recreate one of their dishes. I’m on a bit of an avocado kick (aka. obsessed) and went for the stuffed avocado. As usual I combined a few recipes I found online, although not nearly as festive as Candle 79’s, and turned out something mighty tasty. In it was avocado (duh.), red quinoa, tomatoes, lemon juice, olive oil, minced parsley, sea salt, and black pepper.
